Vegetable and Barley Soup


The perfect hearty family meal for cooler months, try this vegetable and barley soup this weekend.

Ingredients:
1 leek – sliced
2 carrots  – diced
1 parsnip – diced
4 potatoes – peeled and diced
2 celery stalks & leaves – chopped (yes include the leaves, the have so much flavours and nutritional value)
2 bay leafs
2 stalks of fresh thyme – chopped
1-2tsp of vegetable or chicken stock powder
1-2 lts of water depending on how thick you like your soup
2 cups of barley (pre-soak the night before)
Salt and pepper to taste.
Flat leaf parsley to serve
Method:
Melt some butter in a saucepan
Add all the veggies – cook for 10 min on low heat
Add the water
Add the stock powder, bay leaves and thyme
Add the barley
Add the salt and pepper
Bring to the boil then simmer for 50 mins
Serve with a garnish of flat leaf parsley. It’s that simple!
