Tuna Tapenade on Cucumber

Tuna Tapenade on CucumberWith only 3 days until Christmas our kitchen renovation got to the point of being functional. We’re still not finished, but we have bench space, a sink and a working oven and hot plate. After using the laundry as a kitchen I have never been happier to see a sink full of dishes!

About a week before we started the renovations I had placed an order for the new Thermomix companion, the Cook-Key. With our new found bench space and a Thermoix that connected to the internet, our Christmas holidays would be spent cooking new foods & enjoying time as a family. I had previously created a few lists on the Cook-Key, one of which is titled “Things to cook with the kids.” Given that we has about 2kg of cucumber in the fridge we started with making our first Tuna Tapenade on Cucumber.

It was the perfect healthy snack for the kids who were very quick to eat them all up and a sprinkle of chilli on the top was the perfect little touch for Ben and myself. It took no more than 5 minutes to make and could also be made using a blender.

Ingredients:

10g fresh flat-leaf parsley

30g lemon juice

300g tinned tuna

20g olive oil

85g mascarpone

1 anchovy fillet

2 garlic cloves

40g black olives

15g capers

2 cucumbers

1 red chilli

salt and pepper to taste

Method:

Place parsley in mixing bowl and chop 3sec/speed 6

Place lemon juice, tuna, oil, mascarpone, anchovy and garlic in mixing bowl then mix 2 sec/speed 6.

Add olives, capers, salt and pepper then chop turbo1sec/2 tines. Scare down the sides of the mixing bowl with spatula then chops turbo/1 sec/ 2 times

Place cucumber slices on serving plate then put 1 heaped tablespoon tapenade on each, then top with a slice of chilli if desired. Serve immediately or refrigerate until needed.
