Peter’s Paella is a classic Spanish dish that the whole family will love. You can pack it with any number of vegetables, meat or seafood. The spices give the rice an authentic flavour. My father-in-law, Peter, is not Spanish himself but he has taken this on as his signature dish after the family visited Spain […]

This Capsicum and Salami Pizza is the perfect no fuss, quick dinner. It’s also great to use up some vegetables that have been neglected during the week. Taco lovers, have you tried a Mexican Taco Bowl? It is a healthy and easy take on the original and much less messy! It doesn’t take too long to throw together, especially if you have rice at the ready. Cook it up for the family for a refreshing summer dinner. Alternatively, prep it on Sunday for a few lunches during the week. These toppings for the bowl are delish but you can change it up with whatever you fancy: substitute rice for quinoa, add some mixed lettuce leaves, or top with vegan cream cheese instead of cheese and sour cream for a dairy-free meal. Let fussy eaters choose their own toppings or eat it deconstructed. It’s a great meal to eat on the back deck on a warm evening and another bonus is that there’s not much washing up. Buen provecho!

We love it at our place as a […]

This Green Bean Risotto is a wonderfully easy meal with the delicious hint of pesto. It is perfect for a meat-free Spring dinner with a side of fresh salad but could also be incorporated with a favourite cut of meat. The method below is for traditional cooking but it doesn’t take long to get it […]
As we finally exit the coldness of Winter, the truth can be seen – my coat isn’t the only layer I need to shed. I’ve been doing some serious eating over the colder months and indulging my sweet tooth probably more than necessary. A chocolate girl at heart, cacao is usually my go-to but I’m […]
