One time when we were out for dinner on a chilly night we came across a Moroccan slow cooked lamb dish on the menu. It ticked all the boxes: deliciously hearty, easy to eat and paired with an array of flavours and textures. We were keen to try and make a similar version at home […]

Peter’s Paella is a classic Spanish dish that the whole family will love. You can pack it with any number of vegetables, meat or seafood. The spices give the rice an authentic flavour. My father-in-law, Peter, is not Spanish himself but he has taken this on as his signature dish after the family visited Spain […]

This Tomato and Bacon Risotto is our family fave and it is especially convenient when the garden is overflowing with tomatoes. It works best with cherry tomatoes but you can substitute them with other varieties if they are on hand. Likewise you can use onions if leeks are unavailable. Another reason I love this risotto […]
I’d heard rumours about chocolate cake or muffins which had zucchini in them and that the vegetable gave the dough a lovely texture. I decided to give it a go myself by substituting it into an easy chocolate cake recipe. I did a little bit of research first. You are advised to drain the zucchini […]
Tempura is like the Japanese version of our fish and chips but infinitely better. The batter is so much lighter. Consequently, it won’t leave you with that queasy feeling people often get after eating greasy food. It is not reserved for fish and potatoes either. The Japanese deep fry everything: from green beans, eggplant and […]
Pork Tonkatsu is a Japanese dish. It is traditionally served with shredded cabbage, pickled vegetables, rice and miso soup as a set. I recently visited Japan for the first time in ten years and fell in love with Tonkatsu again. I never fully appreciated cabbage until I experienced it in Japan. It is a side for many dishes there and demonstrates that something as simple as shredded cabbage with a sauce can be a delicious accompaniment. It can be a welcome alternative to green salad.
The Tonkatsu set was also very popular with our children in our travels, mostly because of the deep fried crunchy meat, and the sticky rice. It is a good meal to practise using chopsticks for that reason. Whilst Tonkatsu usually uses pork fillets, it is also just as nice with chicken.
