Summer Guacamole

Tis the season, for salads, barbecues and antipasto. Chilled fruits and dips and all things that are delicious and don’t need to have you in a hot kitchen.

Summer guacamole is a staple at my home in summer and brings with it the need for corn chips and cold beers by the pool.

I add an extra twist of summer to my guacamole with lime zest and juice for a citrus summer kick. In winter I add cooked bacon pieces, you could add this too, it puts a delicious smokey flavour through it, or for a touch of heat add 1 tablespoon chilli sauce.

Summer Guacamole

1 large avocado

1 large roma tomato, deseeded

1/4 medium red onion

1 lime

salt and pepper

Method:

Half and scoop out the avocado flesh and put it into a bowl.

Finely dice the deseeded tomato flesh also finely dice the red onion. Add both to the avocado in the bowl.

Zest the lime straight into the bowl and squeeze in the juice of the whole lime.

Add salt and pepper to taste then mash all the ingredients with a fork for a slightly chunky consistency.

Serve as  mentioned above with a cold beer and some corn chips by the pool or for a more waist friendly option with vegetable crudités and a sparkling mineral water.
