Oh how I love a good wrap! Summer, winter i don’t care, a wrap is a delicious no fuss meal that can have ANY ingredients.
In my bag this week were some lovely yellow squash (both sweet and versatile) and I paired this with zucchini and spring onions to create a yummy belly filling wrap.
Squash and Zucchini Fritter Wrap
1 x zucchini
2 x yellow squash
1 x spring onion
4 x tablespoon wholemeal flour
4 x tablespoon milk
1 x tablespoon butter
Salt and Pepper to taste
Grate the zucchini and squash into a mixing bowl. Chop the spring onion and add to the vegetables.
Add the flour, milk, butter and salt and pepper and combine well (I use wholemeal flour to give an extra savoury nutty flavour).
In an oiled pan on low to medium heat create fritters and cook for approx 5 minutes on both sides.
I served mine in a flour wrap with some other lovely produce from my bag this week, including mixed lettuce and ripe tomatoes, with a dash of chilli sauce for kick!
