How about something sweet?
Apples and spice are all the things nice, and easy to do just in a pan in just 15 minutes.
I have served mine on gluten and carb free pancakes and natural yoghurt in the interest of gut health.
You could substitute the sugar in the recipe for Stevia if you wanted to. Also the butter is specifically salted to give the sweetness of the dish the contrast it needs to make it sing.
AND if you wanted to make it really interesting the tiniest dash of black pepper would really bring it to life.
Spiced Apples in Orange Butter Sauce
4 x small apples
1 x large orange
50 grams SALTED butter
1 tablespoon of raw sugar
1/4 teaspoon ground ginger
1/2 teaspoon allspice
1/4 teaspoon cinnamon
Quarter and deseed the apples leaving the skin on (for the fibre). In a pan on medium heat put the apples in with the spices, sugar and half the butter and toss to well coat all the apple pieces in the spice blend.
Add the juice of half the orange and let simmer for a few minutes. Add the remaining butter and orange and cook out until the liquid has formed a syrup and the apples are slightly tender yet still with form and a nice bite.
As above it could be served on pancakes, in a crumble, by itself with custard, so many delicious options!
