Basil. A sweet summer indulgence, and a beautiful annual herb that needs little accompaniment to bring out the best of it.
The simplest of ingredients with pasta and a very nice drop of red, in the setting sun it’s best eaten alfresco!
Simple Summer Spaghetti
3 x Roma Tomatoes
1 Bunch Basil
1 Clove Garlic
1.5 Cups Cooked Spaghetti
2 Tablespoons Olive Oil
1 Teaspoon Butter
Salt and Pepper
Dice tomatoes – NO DESEEDING! you need all those juices and seeds for flavour. Finally chop the basil and garlic.
In a med high pan, add oil and butter, tomatoes, basil and garlic.
Let it bubble away for a couple of minutes while all the flavours combine.
Add cooked pasta, combine and serve – your choice if you like it with some shaved parmesan or red wine.
