Roast Vegetable Salad with Lemon Scented Zucchini Ribbons


Ah Christmas; time to be with family and make an absolute guts of yourself, yay! With that in mind this weeks recipe is designed to be a plate to share, and with the organic fresh goodness of it, possibly be a little less guilt laden than other holiday foods too!

Roast Vegetable Salad with Lemon Scented Zucchini Ribbons

A colourful and delicious platter that can be served warm or slightly cooler as it’s going to be a hot one this Christmas!

Ingredients

1 x Med Sweet Potato

2 x White Potato

1 x Large Beetroot

1 x Zucchini

3 x Carrot

1 x Cob Corn

1 x Red Onion

1/2 Lemon Juice

1.2 Lemon Zest

1 Tablespoon Coriander Seeds

2 x Tablespoons Fresh Thyme

2 x Tablespoon Fresh Oregano

2 x Tablespoons Olive Oil

1 x Tablespoon Butter

This recipe is only slightly more in depth than my usual, but is still quick and no fuss with just an extra dash of festive spirit!

First Beetroot. People can get a little perplexed how to cook with beetroot, let me tell you it is as easy as a potato. For this recipe I just wrapped it in foil and popped it into and oven on 180 degrees for one Hour just like a jacket potato.

While that is cooking cut all your vegetable (except the zucchini) into roughly the same, good sized, chunks.

Crush your coriander seeds in a mortar and pestle. Place vegetables into a bowl and add thyme, oregano, coriander seeds, salt, pepper and olive oil. Toss to coat evenly and lay out in an oven tray and put into the oven for 1 hour.

While that is cooking away and all the delicious herby smells are wafting through your kitchen, prepare the zucchini. Peel strips  with a vegetable peeler until there is nothing left, these strips go in a fry pan with butter, lemon zest and juice, salt and pepper on a med to high heat until that have some colour.

To prep the beetroot for the plate simply peel off the skin with your fingers (it will just slid off,) then cut in chunks and put on the plate with the other roast vegetables. Top with zucchini ribbons to serve.

Delicious, Fresh and good for you! A wonderful colourful and tasty plate to serve alongside roast meats, ham and even seafood on your Christmas day.
