So who got a beautiful cauliflower in their bag this week? Me! (raises hand enthusiastically).
Who is sometimes guilty of having cauliflower in the fridge with black spots on it because you didn’t know what to do with it? Me…….(Raises hand sheepishly)
Sometimes I love cauliflower and sometimes I just don’t know what do do with it that’s not steaming it and putting cheese on it or stir frying it in garlic butter. This is a recipe born out of that conundrum.
On one of my more creative and inspired days I wonder d what flavours I could put with the cauliflower that is not cheese or garlic and that’s when I came up with this recipe….
Roast Cauliflower and Potatoes with Bacon and Thyme
2 Med (or 1 very large) Potato
4 Sprigs Thyme
2 Rashers bacon
Salt and Pepper
Leaving the skins on, dice your potato into 2cm square chunks, cut the cauliflower into medium size florets, slice your bacon into thinnish stops and combine all this in a baking dish.
Strip the leaves from your thyme and sprinkle over the vegetables and generously slosh with olive oil and season with salt and pepper.
Cook in pre heated 180 degrees oven for 50 minutes turning vegetables once half way through.
Can be used a tasty side dish for really any meal!
