Vegetable Tiddly Oggie
Hi, Josh here. While my sister is looking like an animated used dish rag (sorry sis) I was more than happy to step in to do the blog. When I was a young kid I worked for 6 months in a bakery making bread and other essential baked goodies and one of my favourite things is the Tiddly Oggie; a vegetable pastry delight hot or cold, anytime of day. Here’s how you make it:

  1. Grate the potato and squeeze dry.
  2. Grate the carrot, finely slice the leek, cut the kernels from the corn cob.
  3. Combine all prepared ingredients with the peas in 2 tablespoons of olive oil in a pan with salt and pepper to taste. Gently sweat over a low heat for 15 minutes until broken down.
  4. On 2 sheets of puff pastry cut into 8 equal squares. Divide mixture between the 8 pieces and fold into triangle and press edges together.
  5. Brush parcels with egg was and sprinkle with poppy seeds.
