Instructions
In a large stock pot, saute the onion and garlic over low heat until soft.
Add the tomatoes, tomato paste and pepper paste and stir one minute
Add the lentils, stock, bulgur, salt, pepper, and a pinch of sugar.
Simmer 20 minutes until lentils have absorbed the stock and the soup is looking lovely and thick. You can blend her or leave as is.
Check for seasoning and thickness. Add a little extra stock if too thick. Serve with a swirl of olive oil and some dried mint on top.
