Tuna Mornay


Many, many years ago (my teenage years) I lived with a family who took me under their wing for a little while! Jenny who I refer to as my fake mum was always cooking! She had four kids of her own and every night served up dinner and and dessert. I use to love watching her cook and make things from scratch. I had enrolled in year 11 Home Economics and fell in love with cooking. It was then when Jenny brought me my first ever cookbook, Woman’s Weekly Basic and I discovered this recipe for Tuna Mornay. It’s a regular dish served in our home, in fact the first meal I cooked Ben after we met. We have made changes to it over the years to suit our style and often serve it on pasta for the kids. It’s a very simple dish loved by all in our home and perfect for that meat-free Monday.

Instructions
  1. Melt butter in medium oven proof saucepan; cook onion and celery, stirring constantly for about 5 minutes or until onion is soft. Add flour; cook, stirring constantly for 1 minute or until mixture is bubbly. Gradually stir in milk continuing to stir until mixture boils and thickens. Add salt, pepper and nutmeg and stir through.

  2. Add tuna, corn and cheese and stir through until the cheese has melted.
  3. Sprinkle with extra cheese and bake in the oven for 25 minutes or until cheese is golden.

  4. Serve and drizzle the juice of 1/4 lemon. Enjoy!
