Just the thing when you need a little comfort. The toppings are what really make this dish, and it can stand almost anything. My favourites are a soft-boiled or poached egg, fried onions, sizzled ginger and garlic slices, fresh chilli, soy sauce, sesame seeds, chilli flakes, a pinch of white pepper, and either chilli oil or sesame oil. Fresh coriander when you can get it is a real dream!
In a large pot, fry the garlic, ginger, and green onions in a little oil until fragrant.
Add the sweetcorn and saute until the kernels turn bright yellow.
Add the rice and water and some salt, and simmer for 1 hour to 90 minutes, stirring occasionally, until thick and creamy. You might want to add some more water, depending on your preference.
Serve in a deep bowl with your favourite toppings.
