In your frying pan, saute the onion, edamame and capsicum over medium heat in some olive oil for about two minutes.
Push the vegetables to one side and scramble the egg.
Add the rice and stir fry to heat through.
Just before serving, add the soy sauce and salt to taste.
Serve in a bowl with the combined mayo and wasabi. Enjoy!
