Salads in jars are going to deliver that directly to you. Starting with layering your heavier items at the bottom (with optional dressing, or you can add it later) with the lighter leaves on top and all fresh as can be in an airtight jar.
The best part is you can make them out of anything you like – almost every single salad is possible in a jar. Make a bunch at the start of the week for lunches, or pack them away on a sunshiny picnic. You won’t know how to get through summer without them!
This salad makes a Thai-inspired dressing, but feel free to add your own.

- 1 handful organic red cabbage sliced thin
- 1 handful organic cherry tomatoes halved
- 1 small organic carrot grated
- 1/2 small organic cucumber diced
- 1 handful organic mint fresh
- 1 handful organic coriander
- 1 handful organic bean sprouts
- 2 handfuls organic salad mix
- 100 grams organic tofu marinated or protein of choice
- 1 tablespoon organic lime juiced
- 1 tablespoon organic soy sauce tamari, or fish sauce
- 1 tablespoon organic maple syrup
- 1 tablespoon organic olive oil

- In a large, clean jar with an airtight lid, layer the salad ingredients with the lettuce on top. If you are keeping the dressing in the jar, pour the dressing over the cabbage at the bottom.
- Add your dressing if necessary, and shake the jar to distribute.
- Turn out onto a plate and add a couple of toasted chopped peanuts for crunch!
- In a small bowl, whisk the dressing ingredients until emulsified. Check for seasoning - you want it to be balanced.
- Keep crunchy topping elements in a separate container - nuts, seeds, croutons, etc
- Always make sure the dressing is at the bottom, mixed with the heartier items that won't get too soggy - carrot, cabbage, your protein, etc.
