In a blender, add the chickpeas, garlic, tahini, salt, cumin, paprika, lemon juice, olive oil and pepper. Blend until a smooth paste forms, adding water as needed.
Pour out into a shallow dish and top with the chopped cucumber, tomato, olives and pine nuts, with a sprinkle of extra paprika, a crack of ground sea salt, and a squeeze of lemon over the top.
Serve with crispy flatbread crackers.
