Perfect for parties or Christmas bring-a-plates, these delicious little morsels of cheesy goodness are always welcome on any table!
They need only a handful of ingredients and a couple of quick rolls with flaky pastry and you’re good to go. Hot tip: make a double batch and freeze half, and you’ll never be short of a potluck dish around this time of year. Extra extra hot tip: they’re amazing with sweet chilli sauce to dip into.
Combine the shredded spinach, feta, ricotta, mint, semolina, spinach, pepper, and eggs in a large bowl.
Take one sheet of puff pastry and cut in half. Spoon mixture down the centre line of that half. Take the left edge of the pastry and fold it over the mixture. Take the right edge and fold it over the left, making sure to overlap the pastry edges.
Place on the baking tray, seam side down. Brush with extra beaten egg, and top with a sprinkle of sesame seeds. Cut each roll into 8 pieces or whatever you judge to be mouthful size.
Bake on middle rack until the pastry is starting to become golden, about 15 mins. Then move the tray to the very top rack for the last 5 mins of cooking time or until crisp and golden.
