Instructions
Bring a pot of water to boil. When boiling, add the noodles and cook according to packet directions.
In a small saucepan, heat the vegetable stock until hot.
In a large serving bowl, mix the tahini, soy sauce, rice vinegar, sesame oil, chilli oil, and sugar. Stir to combine.
Add the hot stock and mix.
Add the noodles and top with your favourite toppings.
For the corn and bok choy, you could saute briefly in a hot pan, or add them to the noodle water to cook through.
For the egg, bring a small pot of water to a boil. Add the egg and boil for 7 minutes. Remove and run under cold water until cool. Peel and halve.
