Spicy Carrot Dip


A dip with a middle-eastern flavour, this is perfect to make for a crowd or as a spread on sandwiches and wraps. It does taste better cold than hot, but you could definitely serve it as a side dish or on a buffet.

Exceptionally good with turkish bread, toasted flatbread, or chips.

Instructions
  1. Steam or boil the carrots in salted water until soft.
  2. Drain and mash thoroughly.
  3. Add the rest of the ingredients except parsley and either mash in or put in a food processor to blend until smooth.
  4. Check for seasoning - if you don't have harissa you can use paprika and chilli powder. Make it as spicy as you like!
  5. Serve with a handful of chopped fresh parsley over the top.
