Southern Smothered Potatoes


Gosh these are so good – and a wonderful change from the humble mash.

I’ve given quantities for a kilo of potatoes for 4-6 servings, but you’ll want to double that. I promise. The potatoes soak up all of the delicious, salty, buttery, browned flavour and are the most delicious.

Instructions
  1. In a large dutch oven, heat a little olive oil over medium heat.
  2. Add the potatoes and onions and cook, stirring occasionally, about 10 minutes or until the potatoes start to soften.
  3. Add the water, salt, pepper, garlic and stir to combine.
  4. Add the butter on top and put the lid on. Let the potatoes simmer and steam for about 15 - 20 minutes, until potatoes are soft.
