Smoky Black Eyed Peas


Hello, please meet my new favourite meal prep friend – smoky, slow-simmered black eyed peas. Perfect for batch cooking and tucking away in the freezer for a fast meal on a busy day. Add a cheesy, jalapeno-y cornbread on the side and you’ve reached pure heaven!

Also a delicious way of getting those denser leafy greens in if you struggle or are a bit over them – they end up so super soft and silky in this dish.

Instructions
  1. In a large dutch oven-style pot, saute the onion, garlic and celery in olive oil over medium-low heat until softened.
  2. Stir in the paprika and oregano for a few minutes.
  3. Add the beans, stock, bay leaf and kale and bring to a boil.
  4. Once the beans are boiling, turn them down to a simmer. Stir regularly until everything is cooked through and the sauce has thickened a little, 20-30 minutes.
  5. Check here for seasoning and feel free to add chilli powder, cayenne or chilli flakes here.
  6. Serve over rice or mashed potato, or with golden cornbread on the side. Pass around plenty of hot sauce!
