Ingredients
Slow cooked chicken
- 1 organic chicken whole
- 4 organic garlic cloves halved
- organic ginger 5 cm piece, thinly sliced
- 2 star anise
- 2 cinnamon sticks
- 1 cup organic soy sauce
- 1 cup chinese cooking wine
- 1 lt water
- 4 cups organic rice to serve
Garnish
- 2 organic garlic cloves finely diced
- organic ginger 2cm piece cut into thin match sticks
- 2 organic red chilies thinly sliced
- 4 organic spring onions cut into matchsticks
- 1/2 cup organic coriander
- 1/4 cup peanut oil

Instructions
- Place whole chicken in the slow cooker. Add garlic, ginger, star anise, cinnamon sticks, water, soy sauce and Chinese cooking wine. Place lid on the slow cooker and set temperature to low.
- Once chicken is cooked, remove from the slow cooker and pull pieces of chicken of the frame. Arrange chicken on a bed of rice with some of the liquid from the slow cooker.
- Garnish with garlic, ginger, chillies, spring onions and coriander.
- Heat peanut oil in a saucepan (2 minutes) and gently spoon over the top of the garnish. Enjoy!
