In a large saucepan, saute the onion and garlic in about 1/4 cup good olive oil until just starting to caramelise.
Add the tomatoes, a ittle salt, and the basil. Simmer for 30-40 minutes until thick and fragrant. Add pepper and adjust the seasoning - use the sugar here if the tomatoes are still too tart.
Bring a large pot of salted water to the boil.
Add your penne and cook until al dente.
Serve with an extra drizzle of good olive oil, flaky salt, cracked black pepper, and your favourite cheese.
