In a large frying pan, add the olive oil, the corn, capsicum, and onion. Saute until the vegetables are soft and are picking up some colour.
Add the cumin and stir 1 minute until fragrant.
Test for seasoning and add that to taste.
Add hot sauce and chilli flakes, or serve separately. Best when piping hot!
