Rocket, Haloumi, and Roasted Tomato Salad
depending on how hungry you are! sliced 1cm thick.
OR two whole organic tomatoes, roasted in a hot oven until soft
peeled and crushed
organic balsamic vinegar
organic sea salt
organic olive oil
organic cracked black pepper
Heat oven to 200C.
In a small baking dish, mix the tinned tomatoes, olive oil, garlic, balsamic, salt, sugar and pepper. Bake in the hot oven for 15 – 20 minutes until reduced and thickened.
Just before the tomatoes are ready, place the washed rocket on a plate and gently fry the sliced haloumi in some oil in a small frying pan until golden on each side.
When the haloumi and tomatoes are ready, spoon them onto the rocket, sprinkle over cracked black pepper, and dig in!
