When you dream of summer days while the wind whistling outside, serve up this delicious wintery salad and count down the time until there’s sunshine again. When it does hit summer, use juicy, ripe tomatoes and bake them until meltingly soft. And don’t forget – bottle your bounty in the warmer months so you can have this salad any old time. In a small baking dish, mix the tinned tomatoes, olive oil, garlic, balsamic, salt, sugar and pepper. Bake in the hot oven for 15 - 20 minutes until reduced and thickened.
Just before the tomatoes are ready, place the washed rocket on a plate and gently fry the sliced haloumi in some oil in a small frying pan until golden on each side.
When the haloumi and tomatoes are ready, spoon them onto the rocket, sprinkle over cracked black pepper, and dig in!
