  1. In a large roasting tray, toss the pumpkin with a little oil and roast 30 minutes until soft.
  2. Add the mushrooms and roast another 10-15 minutes.
  3. In a large bowl, tip in the washed spinach.
  4. Top with the roasted pumpkin and mushrooms.
  5. Top that with the goat cheese and chopped herbs.
  6. Sprinkle over the white wine vinegar, honey, olive oil, salt and pepper.
  7. Toss the salad and then top with the pumpkin seeds.
