2tablespoonsorganic maple syrupor your favourite sweetener, to counteract bitterness in the plums
In a medium saucepan, combine the chopped plums, the juice and about 1 tablespoon of the grated rind of the orange, the cinnamon stick, the pinch of salt, and the sweetener.
Heat over low-medium heat, stirring occasionally, until the plums break down and create a thick compote. This should take about 20-30 minutes depending on your heat strength.
Check for seasoning and adjust to taste.
Serve on porridge, with yogurt, over muesli or granola, with ice cream, with custard, with cream, or add a topping to make a crumble. it’s so versatile and delicious and perfect to keep a stash of in the fridge.
