Organic Vegan Frittatas are such an easy throw together dinner. You don't have to use the pumpkin you could sub this for potato or throw in whatever else you have available in the fridge. This is a great way to clean out what's left of your organic veggie bag before the next delivery comes. This was a big hit in our house even with the non vegans.

Instructions
  1. Preheat oven to 200 degrees.
  2. Dice pumpkin and cook in boiling water until tender.
  3. Chop rainbow chard and lightly pan fry for 2 minutes.
  4. Heat oil in a small frypan. Once hot add sliced onion, sugar and balsamic vinegar. Cook until caramelised.
  5. In a large bowl mix organic chickpea flour with 350ml of water. Add cooked pumpkin, onion, rainbow chard & baking powder.
  6. Heat a large skillet over a high heat and add in around 4 tbsp of olive oil. Once hot add the mixture and cook on medium heat until it's crispy around the edges. This could take around 10 minutes for it to be crispy. Once it's crispy add herbs of your choice. We used chilli flakes, cumin, salt and pepper. You could add vegan cheese here too.
  7. Place in the oven for 30 minutes until it's cooked throughout and then remove from the oven and cut into slices
  8. Serve with salad, a vegan dip and fresh dill!

If you aren't vegan, you can sub the chickpeas flour for 6 eggs.
