Organic Sweet Onion & Cauliflower Hotdogs

Ingredients
Onion & Cauliflower Filling
Instructions
  1. Chop up the cauliflower into small pieces, a size that will fit nicely into your burger buns. (Small but still chunky and not not too fine)
  2. Toss the cauliflower into a bowl with the turmeric, cayenne pepper, salt, black pepper and olive oil. Mix well, until all the cauliflower starts to turn yellow from the turmeric. Set aside.
  3. In a small saucepan heat the oil, when hot add the onion and maple syrup. Cook for approximately a minute before adding in the cauliflower mixture and the garlic.
  4. Stir often, on a medium heat until the cauliflower is cooked through. Approximately 7-10 minutes.
  5. When cooked, remove from the heat and use the same pan to cook your sausages. (Cook your sausages on a low heat to ensure the casing doesn’t break). When cooked, use a paper towel to soak up any excess oil before adding to the buns.
  6. Now make your hotdogs! Cut your buns down the middle and spread some butter and dijon mustard. I also like to add a little extra Parmesan cheese to the bottom of the bun before the filling goes in. Add the spinach leaves to one side, place the sausage in the middle and the cauliflower and onion mixture on the other side. Sprinkle it with parmesan and chilli flakes and enjoy!
