These delicious organic sun dried tomato koftas are one of the quickest and easiest recipes to make, and great as a meal prep idea for the week. Made with red sumac, which helps to bring a surprisingly tangy flavour to the dish, the smell of them cooking away on the pan, is to die for, I invite you to give it a go.

Ingredients
- 500 grams grass fed organic beef mince
- 2-3 tbsp organic sun-dried tomatoes
- 2 tsp organic crushed garlic
- 1 tsp organic crushed ginger
- 3-4 stems organic spring onions finely chopped
- 1 medium organic carrot finely grated
- ½ tsp red sumac
- ½ tsp organic cracked black pepper
- ½ tsp salt

Instructions
- Firstly place the sun dried tomatoes on a paper towel to remove some of the oil.
- Then add the sun-dried tomatoes to a large mixing bowl together with the beef and all other ingredients. Combine well and then make about 10-11 kofta shaped patties.
- Heat a non-stick fry pan and cook on a medium heat for approximately 5-8 minutes on each side. The cook time will really depend on how "well-done" you prefer your beef.
- Serve hot with a side salad, some baked potatoes or even in between two slices of bread as a mid-week healthy burger.
