Organic Pumpkin Soup
This is hands down the easiest and most delicious pumpkin soup you will ever taste and I believe it’s because of the addition of tomato paste. I first learnt to cook this in year 12 many many moons ago. My Home Economics teacher at the time, Ms Hollice told me the secret to the best pumpkin soup was tomato paste. I thought it was a strange addition, however Ms Hollice was right! And everyone I’ve cooked this for over the years agrees.

Ingredients
Instructions
  1. Dice pumpkin and onion and place in a large pot.
  2. Add water and bring to the boil. Cook unit pumpkin is soft.
  3. Add tomato paste and stir through.
  4. Use a bar mix or blender to mix all of the ingredients.
  5. Add cream and salt and pepper to taste.
