This organic prawn and veggie linguine is deliciously perfect for summertime. It's also a great way to add a few more veggies into a weekly pasta favourite. By creating quick and easy zucchini noodles to swirl into the pasta, we add another layer of flavour to a well loved dish. I invite you to give it a go.

Ingredients
- 1 tbsp organic olive oil
- 4 large organic tomatoes diced
- 1 large clove organic garlic (finely chopped, approx. 2 tsp)
- 6 organic fresh basil leaves
- 1 tbsp organic tomato paste
- ¼ tsp salt
- ¼ tsp organic cracked pepper
- 200 grams small cooked prawns
- 300 grams organic linguini
- 1 large organic zucchini
- ½ head organic broccoli chopped into florets.

- Using a peeler, remove the skin of the zucchini. Then continue to use the peeler to create strips of zucchini noodles. Continue all the way until you reach the core. Discard the core or save it for making broth or soups. Set aside.
- Now cook the broccoli. Use a steamer or simply boil on the stove for approximately 4-5 minutes. Be careful not to overcook, the broccoli should still be bright green when you strain them.
- Let's make the sauce. Heat the oil in a large saucepan and fry the garlic for approximately 2 minutes.
- Add the chopped tomatoes, basil, tomato paste, salt and pepper. Stir well and cook on low with the lid on for approximately 10 minutes or until the tomato starts to break down. When cooked, remove from the heat, and use a masher to break down the rest of the tomatoes. Set aside but keep in the saucepan.
- Cook the linguini as per the packet instructions. If you're using fresh pasta, it should only take a few minutes to cook in boiling water. Strain the pasta, but ensure to keep some of the pasta cooking water in a small jug.
- Place the tomato sauce back onto the stove and set to a low heat. Add the broccoli, zucchini and cooked prawns, stir well and cook for about 1 minute before adding the strained linguini, and ¼ cup of the pasta water.
- Remove from the heat and stir well. Serve immediately and enjoy!
