Organic Potato & Leek Soup
There is nothing I want more on a cold winter's day than something to make me feel warm from the inside out, but also something that will keep my family and I healthy and strong this winter. This version of a classic organic potato and leek soup does just that. It's made with nutrient dense bone broth, anti-inflammatory spices and fresh organic ingredients. Soul soothing on so many levels, I invite you to give it a go.

Instructions
  1. After preparing your veggies and spices as described above, heat the oil in a soup pot and add the onion and garlic. Cook until the onion starts to turn translucent.
  2. Add in the potato, leek, ginger, spices, salt, pepper and curry leaves. Stir well before adding the bone broth, stock, and Chinese cooking wine.
  3. Cover with a lid and cook for approximately 20 minutes or until you can pierce the potatoes easily with a knife.
  4. Do a quick salt check, then using a stick blender, blend until smooth. You can alternatively use a traditional blender.
  5. Serve with your favourite crusty bread for a cosy winter warming soup.
