Ingredients
- 500 grams organic lamb mince
- 1 tbs organic olive oil
- 1 organic corn cob kernels removed
- 1 organic red capsicum diced
- 1 organic onion diced
- 1.5 cups organic cheddar cheese grated
- 1 punnet organic cherry tomatoes halved
- 8 wraps
- coriander to serve
- 1 organic lime cut into wedges
- salt and pepper to taste
- 1 tsp organic cumin
- 1 tsp organic ground coriander
- 1 tsp organic paprika
- 1 clove organic garlic diced

- Heat olive oil in a large frying pan over medium heat. Add onionand garlic and cook for 4-5 minutes. Add the lamb mince and spices. Cook for 4-5 minutes or until browned.
- Add the corn kernels and diced capsicum to the pan. Cook for another 4-5 minutes.
- Season the mixture with salt and pepper, then set it aside to cool slightly.
- Place a wrap on a clean surface. Sprinkle some cheddar cheese over it. Spoon some of the lamb mixture on top. Place another wrap on top.
- Repeat the process with the remaining wraps, cheese, and lamb mixture.
- Heat some olive oil in a large frying pan over medium heat. Cook the wraps on both sides for 3 to 4 minutes, using a spatula to press them down. Be careful not to burn them.
- Once the wraps are golden brown, transfer them to a tray covered with foil to keep them warm. Repeat the process with the remaining wraps, spacing them out in the pan.
- Cut the cooked wraps into wedges. Serve them with cherry tomatoes, coriander, and lime wedges.
