Ingredients
- 4 organic zucchinis
- 1 cup organic almond meal
- ½ cup organic polenta
- ¼ cup organic grated parmesan
- 3 forganic ree range eggs
- 1 clove organic garlic finely chopped
- 3 organic spring onions
- ¼ tsp salt
- ¼ tsp organic black pepper
- ¼ tsp organic ground coriander powder
- 1 tbsp organic olive oil for pan frying

Instructions
- Firstly peel the zucchini and cut off both ends. Then using the peeler, begin peeling the zucchini into ribbons until you get all the way down to the core. (You can keep the core for roasting later).
- Add the zucchini ribbons into a large bowl, together with the almond meal, polenta, parmesan, salt, pepper, coriander and eggs.
- Combine well, using your hands if required. Then form the mixture into rough patty shapes.
- Heat up the oil in a large fry pan, and cook the fritters on both sides until golden brown (approx. 4-5 mins on each side).
- Serve hot or cold, by itself, alongside some of your favourite veggies or even inside a yummy sandwich.
