This cherry tomato and garlic pizza sauce is a really great one for the weekend, and an amazing way for the family to get involved in making dinner. You can also make the sauce, and store it in the fridge or freezer to make a fresh and delicious, mid-week dinner fast. It's so easy and a great way to use up all those succulent, juicy cherry tomatoes is this week's bag!

Ingredients
- 250 grams organic cherry tomatoes diced
- 2 large organic tomatoes diced
- 10 cloves organic garlic finely chopped
- 1 large organic white onion finely chopped
- ½ tbsp organic olive oil
- ½ cup water
- ½ tsp salt
- ½ tsp organic black pepper
- ¼ tbsp truffle oil optional
- 1 organic pizza base

- organic fresh mozzarella (or cheese of choice)
- 1 organic spring onion
- serrano jamon (or meat of choice)

Instructions
- First make the sauce by heating the olive oil in a small saucepan. When hot add the chopped garlic and sauté for about a minute, before adding the onion.
- When the onion starts to turn translucent, throw in the diced cherry tomatoes, tomatoes, salt and pepper. Cook for about a minute to infuse the flavours, then add the water and cover with a lid.
- Cook on low for approximately 10 minutes stirring occasionally.
- Remove the lid and using a masher, break up and mash the now soft tomatoes. Stir well and simmer on low with the lid off for a further 5-10 minutes until the sauce begins to thicken up. Right at the end, if you like you can add in the truffle oil for an extra kick.
- Place pizza base on a lined or sprayed pizza tray and spread your pizza sauce evenly over the top. Arrange your toppings of choice; I love the combination of fresh mozzarella, jamon and spring onions but you can add other vegetables and meats of your choosing.
- Bake at 180 degrees (fan forced) for approximately 8-10 minutes, then turn the oven up to 220 degrees and cook for another 5 minutes until cooked through.
- Serve Immediately with your favourite side salad or some fresh skin on fries.
