What’s more satisfying that the iconic Aussies Chips you find down at the local seaside fish and chips shops? It definitely has me thinking about summers past. This recipe shows you how to recreate a healthier version at home for your family, with some delicious organic potatoes. These baked not fried baked yellow potato wedges, will give you all the nostalgia and less of the guilt. A little turmeric in the water and you get to enjoy these tasty, healthy, super appetising potato wedges.

Instructions
  1. First wash and strain your potatoes. If you prefer your potatoes skinned then do so now, but I personally love these wedges with the skin on.
  2. Cut each potato into half, and then slice them up into wedges. Try not to cut them too thick otherwise they will take much longer to get crispy in the oven.
  3. Place the potatoes, salt, turmeric powder into a medium sized saucepan and add the water, bring to the boil and cook until you can stick a knife part way into the potatoes. Make sure to keep your eye on it so as to not over boil. The addition of turmeric here helps to achieve that iconic yellow hue, making these wedges not just taste good but also looks really appetising.
  4. When the potatoes are partly cooked, strain, and add to a large bowl. Add in the rest of the spices and olive oil, and give it all a good toss to combine. This step (the tossing) is really important as it helps to create that delicious crunchy coating when baked. So if you think you're done tossing, keep going for another 30 seconds or so.
  5. Add to a lined baking sheet and bake at 180 degrees for 40-45 minutes. Depending on how thick the wedges were cut, they may require a little less or a little more time. Do a quick check in between, give them a quick toss and change the cook time according to your desired crunchiness.
  6. You’re done! Now they are ready to enjoy with your favourite main, perhaps some delicious grilled fish.
