Instructions
  1. Put a large pot of salted water on to boil.
  2. When it boils, add the pasta and cook as directed on the package.
  3. If you haven’t already, saute your bread cubes in a little butter and salt until they become croutons. Don’t forget to check our recipe if needed!
  4. While pasta is cooking, saute the green onion, garlic, mushroom and zucchini over medium-high heat.
  5. Throw in the cooked pasta and the cream, with a bit of salt. Cook a few minutes until cream reduces.
  6. Taste for seasoning and add the parmesan. Stir through.
  7. Place the pasta in a wide, shallow bowl. Sprinkle a little more parmesan on.
  8. Quickly fry an egg over high heat, adding salt and pepper.
  9. Serve the pasta with the crispy fried egg, the croutons, and any green herbs you have to hand.
