Instructions
In a large bowl, mix all the veggies, spices and salt together.
Mix in the vegetable oil until everything is coated
Heat a grill pan or a barbecue to high heat and grill the capsicum, mushrooms, and onions until softened and blackened in parts.
Serve on fresh warm tortillas with your favourite toppings.
