We recommend a cast-iron grill or bbq to get that all-important charred flavour, but the’re still delicious if you just fry all the ingredients.

Serve with your favourite accompaniments. Grilled corn tortillas are the best!

Instructions
  1. In a large bowl, mix all the veggies, spices and salt together.
  2. Mix in the vegetable oil until everything is coated
  3. Heat a grill pan or a barbecue to high heat and grill the capsicum, mushrooms, and onions until softened and blackened in parts.
  4. Serve on fresh warm tortillas with your favourite toppings.
