Instructions
  1. In a large, deep pot, saute the onion, capsicum and garlic over medium heat in a little oil until softened and starting to brown.
  2. Add the cumin, coriander, smoked paprika and chilli powder and stir to heat for a minute or two.
  3. Add the canned tomatoes and simmer another minute or two.
  4. Add the rinsed beans and corn and let simmer for about 20 minutes, until thick and savoury. Check for seasoning and add salt/pepper/chilli powder to you liking. If still too tart, correct with a little sugar.
