Jambalaya


Honestly, a spicy one-pot meal is all I need throughout winter. There’s veg, rice, and your choice of protein in one bowl and you can chilli it up to your liking (or not at all, though paprika is a must). Grab me a fork and I’m good! (Oh also, if you eat seafood, prawns would be great in this)

Instructions
  1. In a large dutch oven, brown your sausage in a little olive oil and remove.
  2. Same with the chicken.
  3. In the pot you cooked the sausage and chicken in, saute the onion, green pepper and garlic over medium low heat until softened.
  4. Add in the tomatoes, rice, stock, thyme, parsley, cajun seasoning, smoked paprika, regular paprika, salt and pepper. turn the heat to low.
  5. Cook, stirring often until the rice has absorbed all of the sauce and is cooked. Thin with a little water if you need.
  6. Taste for seasoning and return the chicken and sausage to the mix to heat. Adjust the spice ratio with chilli powder or cayenne.
  7. Serve with hot sauce and sliced green onion.
