  1. In a large pot, cover the potatoes with cold water. Add plenty of salt and bring to a boil.
  2. Turn the heat down just a little so the pot doesn’t boil over, and boil until the potatoes are soft. Organic potatoes can often be the waxy variety, and they don’t easily mash down so just be aware of that. You’ll need a little extra help if that’s the case!
  3. When the potatoes are fully cooked, drain the pot but leave the potatoes in.
  4. Place the pot with the potatoes back on a medium heat and add the milk.
  5. When the milk begins to boil, take off the heat and add the butter, salt, and pepper and mash.
  6. Once mashed, get a wooden spoon and really whip some air into the potatoes!
  7. Add the chopped spring onion and taste for seasoning. Turn out onto a serving plate. Add a big knob of butter on top and enjoy.
