  • 50gram organic parmesan cheese
  • 1 organic brown onionsfinely diced
  • 2cloves organic garlicfinely diced
  • 30grams organic olive oil
  • 1/3cup aborio rice
  • 100grams white wineor water if you prefer
  • 1tablespoons stock paste
  • 2cups organic green beanstopped, tailed and halved
  • 2cups water
  • 1/2cup organic peasfresh or frozen
  • 3tablespoons pesto
  • saltto taste
  • pepperto taste
  1. Preheat the oven to 180 degrees or 160 degrees fan forced.
  2. Heat the oil in a flame proof casserole dish over medium heat.
  3. Add the onion and garlic and stir until softened.
  4. Next, add the rice and wine and stir for a few minutes.
  5. Put in the stock paste, water and green beans.
  6. Bring to the boil, stirring occasionally.
  7. Cover the dish with a lid and bake for 25 – 30 minutes in the oven.
  8. When you remove the dish from the oven, add in the salt and pepper, pesto, peas and parmesan.
  9. Serve on its own, with a side salad, or favourite cut of meat. Enjoy!
