  1. Heat oil in a large wok. Add spring onions and garlic stirring continuously for 3-5 minutes.
  2. Add chicken thighs, fish sauce and soy sauce and continue to stir for 15 minutes.
  3. Add Kaffir lime leaves, salt & pepper and continue to stir. For those who love chilli, you can add now or after you serve up the kids meals!
  4. Continue to stir for another 15 and add more fish sauce or soy sauce to suit your taste buds. Add water if required.
  5. Serve on a bed of rice and enjoy!
