Not quite ice-cream, not quite a smoothie, and based totally on a piña colada, you won’t want to be without this mango-coconut-lime concoction this summer!
Eat straight away with a straw and a spoon, or pop back in the freezer for a few minutes to firm up if you want to scoop it like regular ice cream. It’s exactly what we all need right now.
In a high-powered blender, add the frozen mango, coconut milk, maple syrup, lime juice and zest.
Blend for 5 minutes or until smooth and creamy. You many want to add a little extra water, coconut water, milk or cream to help with the blending process - some chunks of mango take a while to break down!
Spoon into glasses and top with a little extra lime zest and the optional coconut.
