I created this recipe out of sheer desperation to attempt to convince my sugary cereal loving child to have a healthier breakfast that was quick and easy for me to prepare. Luckily, it is also a great grab and go meal for adults too, and another lunchbox option for my older kids going back to school this week. The frituffin (fritatta muffin) is a wholefood treat that is easy to whip up and cook in no time. I may be calling it a breakfast cupcake to convince my youngest to give it a go.

Instructions
  1. Preheat the oven to 180 degrees Celsius
  2. Fry up the bacon in a pan
  3. Whisk the eggs
  4. Add all other ingredients (including the bacon) and mix
  5. Spoon into six greased muffin tins
  6. Bake for fifteen minutes until the egg is cooked through.
