French Onion Soup

Ooh la la! The only thing better than a simple French onion soup is when it’s made with pure organic ingredients. Suddenly your simple soup is elevated from incredible to completely out of this world!

Instructions
  1. In a large stockpot, saute the onions in the butter over medium-low heat about 40 minutes until dark golden and soft.
  2. Sprinkle the flour over and stir until it has been mixed through with the onions.
  3. Add the white wine or brandy and cook until it has been absorbed by the onions and flour.
  4. Add the stock or water, the salt and pepper, and half of the fresh thyme, stirring quickly to avoid the flour turning to lumps. Stir or whisk until smooth and the flour has dissolved.
  5. Bring to a boil and then simmer 1 hour until the soup has a deep, strong flavour.
  6. Grate the gruyere onto the baguettes.
  7. Ladle the soup into shallow bowls and top with the cheesy baguettes.
  8. Put each bowl under the grill until the guyere melts and everything is hot and bubbling.
