Egg Fried Rice

In a large wok, heat a little oil and cook the egg until soft. Remove to a plate
Wipe out the pan and add more oil. Cook the green onions two minutes, then add the garlic.
After a minute or so, add the peas, corn and carrot. Cook for 2-3 minutes before adding the rice.
Cook over high heat until rice is heated and veggies are cooked through.
Return the egg to the pan and add salt and soy sauce.
Serve with a sprinkle of green onions over.
